From NFL draftees to Peach Bowl heroes like Shaquem Griffin, discover the hard-hitting legends who defined thirty years of defensive dominance and shaped the Knights’ FBS era.
The Daytona News-Journal created its 105-man roster of all-time UCF greats, and nine linebackers across Knights history have graced the All-FBS team since the program joined the FBS 30 years ago.
Many talented linebackers have stepped foot on campus in Orlando. Some have made program history, putting UCF on the map, and have been drafted by the NFL, representing the Black and Gold.
The Knights' All-FBS team is not limited to players who finished their collegiate careers in Orlando. Transfers and players who did not finish their career at UCF made the News-Journal's 105-man roster.
Tuesday's list will focus on the nine linebackers who made the News-Journal's All-FBS team.
Shaquem Griffin, Starter
Griffin is arguably one of the most influential players in UCF history. He won the AAC Defensive Player of the Year in 2016 and Defensive MVP of the 2018 Peach Bowl despite being born with an amniotic band sequence that led to the amputation of his left hand.
UCF nominated him into the Athletics Hall of Fame in 2024, and could remain as a staple school in the Griffin family, as the Knights are recruiting his nephew, Amir Smith.
Terrance Plummer, Starter
Plummer was a two-time All-AAC First Team selection in back-to-back seasons (2013-14). He led UCF in tackles (99) with 13 tackles for loss, four sacks, two forced fumbles and recoveries, one interception and six pass breakups in his senior campaign.
In the prior season, he earned Tostitos Fiesta Bowl Defensive MVP in the Knights' victory over the Baylor Bears. It was their lone victory in the all-time series.
Tito Rodriguez
Rodriguez tied the single-game record for most tackles (23) in a loss to the Arkansas Razorbacks in November 2001. He proceeded to finish that season with an FBS-era record 143 tackles.
Nakia Reddick
Reddick played for UCF in the 1990s, when the program was in its independent era. He totaled 118 tackles and four forced fumbles in 1996.
Nate Evans
Evans ranked second in the AAC in tackles per game (8.6) and led UCF in that category with 112 (69 solo). He added a sack, four pass breakups, seven hurries and a fumble recovery to his season totals that led to a Second Team All-AAC selection.
Tatum Bethune
Bethune spent two seasons at UCF before transferring to Florida State in 2022. He started 17 of his 35 games and tallied 185 tackles (13 for a loss), 4.5 sacks, three interceptions and two forced fumbles.
Jason Johnson
Johnson transferred from Eastern Illinois to spend his final years in the Black and Gold. He started all 14 games in his senior season in 2022 and led the team in tackles (126) and earned a First Team All-AAC selection by league coaches.
As a fifth-year, Johnson became the first Knight to have back-to-back seasons with over 100 tackles since Plummer. He finished his career with a Second Team All-Big 12 selection, helping UCF settle in a Power Four conference.
Chequan Burkett
Burkett earned Second Team All-AAC in 2017, starting every game at inside linebacker. He finished second on the team in tackles with 74, and added three pass breakups, three QB hurries, one fumble recovery and forced fumble and 1.5 sacks.
